
Graham Cracker Fluff
Graham Cracker Fluff may not be the easiest pudding dessert to make but it sure is delicious enough to be worth the work.
Servings 8
Ingredients
- 1 pkg. unflavored gelatin
- 1/3 cup cold water
- 1/2 cup sugar
- 3/4 cup whole milk
- 2 Nature's Yoke eggs, separated
- 1 tsp vanilla
- 1 cup heavy cream, whipped
CRUMBS:
- 3 tbsp butter
- 12 graham cracker squares, crushed
- 3 tbsp sugar
Instructions
- Soak gelatin in cold water.
- Mix sugar, milk and beaten egg yolks in double boiler. Boil 1 minute.
- Remove from heat; add gelatin and vanilla. Cool.
- When starting to congeal, add stiffly beaten egg whites and whipped cream to pudding mixture.
- Alternate layers of fluff and cracker crumbs in serving dish of your choice.

Have you made this a day ahead? I’m wanting to make it for Christmas and wondering if the egg whites would “deflate” if I make it the day before?
I was out-of-town over Christmas and am sorry that I missed commenting on this question until now. I have not tried making Graham Cracker Fluff the day before and am not sure how the egg whites would hold up. If it was me, I would make it the day of. In the chance that you were brave and made it a day ahead, let me know how it turned out!

Day ahead is totally fine-family has loved this pudding forever! Leftovers one day old are perfectly fine!
Graham wafer holds up well. I usually make it a day ahead. You can even make it ahead and put it in the freezer or freeze leftover fluff. 😊
