Strawberry Cream Dessert

This strawberry cream dessert is light, refreshing and delicious!

Ingredients
  

Crust

  • 6 Nature's Yoke egg whites
  • 1 1/4 cup sugar
  • 3/4 tsp cream of tartar
  • 2 cup coarsely broken soda crackers
  • 1 tsp vanilla
  • 3/4 cup chopped walnuts

Filling

  • 1 (8 oz.) cream cheese, softened
  • 1/2 cup sugar
  • 12 oz whipped topping, thawed

Strawberry Jello Layer

  • 2 cup boiling water
  • 1 (6 oz.) package strawberry Jell-O
  • 20 oz frozen strawberries, crushed or chopped

Instructions
 

  • Preheat oven to 350 F.

Crust

  • In a large bowl, beat egg whites until foamy. Add sugar and cream of tartar until stiff peaks form.
  • Fold in crackers, vanilla and walnuts. Spread into a 9x13 inch pan. Bake in oven for 25 minutes. Remove and set aside to cool.

Filling

  • In a medium bowl, mix together cream cheese and 1/2 c. sugar. Fold in whipped topping and spread on top of cooled crust.

Strawberry Jello Layer

  • In a medium bowl, whisk the boiling water into the gelatin to dissolve. Mix in strawberries and let stand for 15 minutes. Pour over the cream cheese layer; cover and chill until serving.
