Salmon Patties

Upgrade a simple can of salmon by creating these moist, flaky Salmon Patties with a crunchy outer crust.

Ingredients
  

  • 15 oz can salmon, drained
  • 2 Nature's Yoke eggs
  • 1/4 cup milk
  • 1/2 cup cracker crumbs
  • 1/8 tsp coarse ground black pepper
  • 2 tbsp minced onion
  • 4 tbsp butter

Instructions
 

  • Break up salmon into small pieces with a fork; add egg, milk, crumbs, pepper and onions.
  • Melt butter in large skillet. Drop salmon mixture by tablespoons into hot butter and fry a few minutes on each side, or until golden brown. NOTE: Canned mackerel can be used instead of salmon.
