Upgrade a simple can of salmon by creating these moist, flaky Salmon Patties with a crunchy outer crust.
- 15 oz can salmon, drained
- 2 Nature's Yoke eggs
- 1/4 cup milk
- 1/2 cup cracker crumbs
- 1/8 tsp coarse ground black pepper
- 2 tbsp minced onion
- 4 tbsp butter
- Break up salmon into small pieces with a fork; add egg, milk, crumbs, pepper and onions.
- Melt butter in large skillet. Drop salmon mixture by tablespoons into hot butter and fry a few minutes on each side, or until golden brown. NOTE: Canned mackerel can be used instead of salmon.
