Ingredients
Crust
- 1 cup butter
- 2 cup flour
- 1/4 cup sugar
Middle Layer
- 1 1/2 cup sugar
- 1 tbsp flour
- 3 Nature's Yoke eggs, beaten
- 1/8 tsp salt
- 1 cup whipping cream
- 5 cup rhubarb, chopped
Topping
- 3 oz cream cheese, softened
- 1/2 cup confectioners sugar
- 1/2 tsp vanilla
- 2 cup Cool Whip
Instructions
Crust
- Melt butter; add flour and sugar. Mix together and press into bottom of 9x13 pan. Bake at 350 F. for 10 minutes.
Middle Layer
- Mix ingredients for the middle layer together and pour over baked crust. Bake at 350 F. for 40-45 minutes. Let cool.
Topping
- Beat cream cheese, sugar and vanilla together until smooth and fold in Cool Whip. Refrigerate until ready to serve.
