Rhubarb Delight

Rhubarb Delight is so delicious and light for the summer!

Ingredients
  

Crust

  • 1 cup butter
  • 2 cup flour
  • 1/4 cup sugar

Middle Layer

  • 1 1/2 cup sugar
  • 1 tbsp flour
  • 3 Nature's Yoke eggs, beaten
  • 1/8 tsp salt
  • 1 cup whipping cream
  • 5 cup rhubarb, chopped

Topping

  • 3 oz cream cheese, softened
  • 1/2 cup confectioners sugar
  • 1/2 tsp vanilla
  • 2 cup Cool Whip

Instructions
 

Crust

  • Melt butter; add flour and sugar. Mix together and press into bottom of 9x13 pan. Bake at 350 F. for 10 minutes.

Middle Layer

  • Mix ingredients for the middle layer together and pour over baked crust. Bake at 350 F. for 40-45 minutes. Let cool.

Topping

  • Beat cream cheese, sugar and vanilla together until smooth and fold in Cool Whip. Refrigerate until ready to serve.
