Quick Coffee Cake
This quick coffee cake is buttery and cinnamon-y and so delicious! Bake it in the morning before work and treat the office staff...they'll love you!

Ingredients
- 1 cup oil
- 2 Nature's Yoke eggs, beaten
- 1 tsp vanilla
- 1 cup whole milk
- 1 cup sugar
- 3 cup all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 1/2 cup brown sugar
- 2 tsp Saigon cinnamon
- 1/2 cup butter, melted
Instructions
- Preheat oven to 350 F.
- In a large mixing bowl, combine oil, eggs, vanilla and milk. Add sugar, flour, baking powder and salt.
- Pour half of the batter into a 9x13 baking pan.
- In a small bowl, combine brown sugar and cinnamon. Sprinkle half of streusel on top of batter. Top with remaining batter and sprinkle the remaining streusel on top. Drizzle with melted butter.
- Bake, uncovered, for 25-30 minutes.

I made the coffee cake this morning and it was delicious. So moist and sweet with a cup of coffee. I might reduce the streusel a little next time.
