Pineapple Upside Down Cake

Pineapple Upside Down Cake, an American favorite for more than 90 years, is a classic cake with its moist, flavorful topping of pineapple rings and cherries.

Ingredients
  

  • 2/3 cup sugar
  • 1/4 cup butter
  • 1 Nature's Yoke egg
  • 1 tsp vanilla
  • 1 1/2 cup cake flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/2 cup milk
  • 3 tbsp soft butter
  • 1/2 cup brown sugar
  • Pinapple rings
  • maraschino cherries

Instructions
 

  • Cream sugar and butter. Add egg and vanilla. Beat well.
  • Combine dry ingredients and add to batter, alternating with milk.
  • Spread soft butter thickly on the bottom and sides of a spring form cake pan. Sprinkle brown sugar over butter and arrange well-drained pineapple rings over the sugar. Pour batter evenly over pineapples.
  • Bake at 350 F. for 45 minutes. Allow to cool. Remove from spring form pan and invert on platter. Serve with whipped cream if desired.
