Date Pudding

This old-fashioned date pudding is so delicious!

Ingredients
  

Cake

  • 1/2 tsp baking soda
  • 1/2 cup hot water
  • 1/2 lb dates, finely diced
  • 1 1/2 tsp butter
  • 1/2 cup sugar
  • 1 Nature's Yoke egg, beaten
  • 3/4 cup flour
  • pinch of salt

Cream

  • 2 cup heavy whipping cream
  • 1/2 cup sugar

Instructions
 

Cake

  • Dissolve baking soda in hot water and pour over dates; cool.
  • Cream butter, sugar and egg.
  • Mix in flour and salt; add dates.
  • Pour into a greased 9 x 9 pan. Bake at 350 F. for 25 minutes, or until center springs back lightly with touch of fingertip.
  • Cool cake completely. (It can be frozen a week or two before using. Make sure to thaw before using.)

Cream

  • Whip heavy cream with sugar until soft peaks form. (Don't over beat or you will have butter!)
  • To serve, cut cake into bite-size pieces. Top with whipped cream and fold gently.
