
Date Pudding
This old-fashioned date pudding is so delicious!

Ingredients
Cake
- 1/2 tsp baking soda
- 1/2 cup hot water
- 1/2 lb dates, finely diced
- 1 1/2 tsp butter
- 1/2 cup sugar
- 1 Nature's Yoke egg, beaten
- 3/4 cup flour
- pinch of salt
Cream
- 2 cup heavy whipping cream
- 1/2 cup sugar
Instructions
Cake
- Dissolve baking soda in hot water and pour over dates; cool.
- Cream butter, sugar and egg.
- Mix in flour and salt; add dates.
- Pour into a greased 9 x 9 pan. Bake at 350 F. for 25 minutes, or until center springs back lightly with touch of fingertip.
- Cool cake completely. (It can be frozen a week or two before using. Make sure to thaw before using.)
Cream
- Whip heavy cream with sugar until soft peaks form. (Don't over beat or you will have butter!)
- To serve, cut cake into bite-size pieces. Top with whipped cream and fold gently.
