
Buttermilk Pumpkin Waffles
Buttermilk Pumpkin Waffles are a delicious, seasonal breakfast (or dinner!) your whole family will love.

Ingredients
- 1/4 cup melted butter
- 1 Nature's Yoke egg
- 2 1/4 cup buttermilk
- 1/2 cup brown sugar
- 1 cup pumpkin puree
- 2 cup flour
- 1/2 tsp salt
- 1 tbsp baking powder
- 3 tbsp corn meal
- 1/4 tsp cinnamon
- 1 1/2 tsp pumpkin pie spice
Instructions
- Preheat waffle iron.
- In medium bowl combine butter, egg, buttermilk, brown sugar and pumpkin.
- Add flour, salt, baking powder, corn meal, cinnamon and pumpkin spice.
- Mix until just combined- do not over mix.
- Pour batter into waffle iron and bake until golden brown.
- Serve with maple syrup and/or cool whip.
