Buttermilk Pumpkin Waffles

Buttermilk Pumpkin Waffles are a delicious, seasonal breakfast (or dinner!) your whole family will love.

Ingredients
  

  • 1/4 cup melted butter
  • 1 Nature's Yoke egg
  • 2 1/4 cup buttermilk
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 2 cup flour
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 3 tbsp corn meal
  • 1/4 tsp cinnamon
  • 1 1/2 tsp pumpkin pie spice

Instructions
 

  • Preheat waffle iron.
  • In medium bowl combine butter, egg, buttermilk, brown sugar and pumpkin.
  • Add flour, salt, baking powder, corn meal, cinnamon and pumpkin spice.
  • Mix until just combined- do not over mix.
  • Pour batter into waffle iron and bake until golden brown.
  • Serve with maple syrup and/or cool whip.
