Ingredients
  

  • 6 Natures Yoke Omega-3 eggs soft boiled*
  • 1 large tomato sliced
  • 4 – 6 inch thin pizza crusts
  • 1 cup pizza sauce
  • 1 lb mozarella cheeseballs packed in water, sliced thinly**
  • 1/2 lb crumbled gorgonzola
  • 1/4 lb small pepperoni slices
  • 2 cups baby spring greens
  • 2 Tablespoons balsamic glaze***
  • Black pepper

Instructions
 

  • Pre-heat oven to a 500º F broil.
  • Add spring greens to a medium bowl, drizzle with balsamic glaze, mix and set aside.
  • Place crusts on cookies sheet(s)
  • Divide the sauce between the crusts. Spread with an offset spatula.
  • Arrange tomato slices on each pizza. Sprinkle with pepper.
  • Next, arrange the pepperoni and cheeses on the pizza.
  • Place under the broiler until cheese is melty and the pepperoni is warmed, about 4-5 minutes.
  • Remove from oven.
  • Place 3 soft boiled egg halves on each pizza.
  • Add the balsamic greens on top of each pizza and sprinkle with pepper.

Notes

*To soft boil an egg, bring water to a boil in a large sauce pan. Once boiling, gently add the eggs and boil for 7 minutes. Once done, drain and cover with cold water to stop the eggs from cooking further.
**We used mozzarella packed in water, this is a softer and creamier mozzarella. However, if you can only find the shredded mozzarella that will work great as well.
***Balsamic glaze is NOT the same as balsamic vinegar. Balsamic glaze is thicker and sweeter, making it the perfect compliment to the savory flavors. A little goes a long way.
