Carrot Dressing

Carrot Dressing makes a stunning platter when paired with peas... it will also stun your taste buds.  It's a perfect autumn side dish, or any time of year for that matter.

Ingredients
  

  • 4 cup cooked carrots, shredded
  • 3/4 cup water
  • 1 tsp salt
  • 4 Nature's Yoke eggs, beaten
  • 1 cup milk
  • 1 cup Saltine cracker crumbs
  • 3/4 cup Cheddar cheese, shredded
  • 1/3 cup butter, melted
  • 1/4 cup onion, chopped

Instructions
 

  • Peel carrots and cover in kettle with water. Cook until soft-firm. Drain and cool slightly, then grate/shred.
  • Combine carrots and the rest of ingredients in a large mixing bowl.
  • Spray crock pot with cooking spray and transfer carrot dressing to crock pot.
  • Cook on LOW for 4-5 hours. To serve, dip out with ice cream scoop to form balls. Place balls around edge of platter and pile cooked peas in the center for an attractive dish. Drizzle with browned butter if desired.
