
Carrot Cake
If I were a child, I'd call it a vegetable and eat Carrot Cake with its cream cheese frosting for every meal. I'm tempted to anyway.

Ingredients
- 4 Nature's Yoke eggs
- 2 cup sugar
- 1 1/4 cup oil
- 3 cup raw grated carrots
- 1 cup chopped nuts (optional)
- 2 cup flour
- 2 tsp cinnamon
- 2 tsp baking powder
- 1 tsp soda
- 1 tsp salt
Cream Cheese Frosting
- 8 oz cream cheese
- 1/2 cup softened butter
- 1 tsp vanilla
- 1 lb powdered sugar
Instructions
- Combine eggs, sugar and oil.
- Mix carrots and nuts. Add to dry ingredients.
- Bake in a 9x13 pan at 350 degrees F. for 45 minutes.
- Frost with cream cheese frosting.
Cream Cheese Frosting
- Cream butter and cream cheese.
- Add remaining ingredients and beat till creamy.
- Spread on cake.
