Ingredients
- 2 cup rolled oats
- 1/2 cup flaked coconut
- 1/4 cup brown sugar, packed
- 1 tsp baking powder
- 1 tsp Saigon cinnamon
- 1/2 tsp salt
- 1 tbsp milled flax seed
- 2 cup 1% milk
- 3 tbsp coconut oil, softened
- 1 Nature's Yoke egg, beaten
- 1 tsp vanilla
- 1 1/2 cup blueberries
Instructions
- Preheat oven to 350 F. Grease an 8 inch square baking dish or individual ramekins.
- Mix oats, coconut flakes, brown sugar, baking powder, cinnamon, salt and flax seed in a bowl.
- Whisk milk, egg, coconut oil and vanilla together in a separate bowl.
- Arrange 2/3 of the blueberries into the bottom of the prepared baking dish. Combine oats and milk mixture together and spoon over berries. Sprinkle with remaining blueberries.
- Bake about 35 minutes, or until golden brown on top. Oatmeal should be bubbly around the edges. Cool five minutes before serving.
