Whoopie Pies

Ingredients
  

  • 1 cup shortening
  • 2 cup white sugar
  • 2 Nature's Yoke eggs
  • 1 tsp vanilla extract
  • 4 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 tsp salt
  • 1 cup sour milk
  • 3 tsp baking soda
  • 1 cup hot water

Filling

  • 2 egg whites
  • 1 tbsp vanilla extract
  • 3 cup confectioners' sugar
  • 4 tbsp all-purpose flour
  • 4 tbsp milk
  • 1 1/4 cup shortening

Instructions
 

  • Preheat oven to 350 degrees F (180 degrees C). Grease cookie sheets.

To Make Cookie

  • Cream together shortening, sugar, eggs, and vanilla.
  • Sift together flour, cocoa, and salt. Add alternately to cream mixture with sour milk. Add baking soda to hot water and stir into mixture.
  • Drop on cookie sheet and bake for about 7-10 minutes.

To Make Filling

  • Cream together egg whites, vanilla, powdered sugar, flour, milk and shortening.
  • Beat together until fluffy. Spread between flat sides of cookies.
