Spinach Strawberry Salad

Popping with color, bursting with flavor and brimming with texture, this salad will quickly make it to the top of your "favorite salad list".
Servings 8

Ingredients
  

  • 10 fresh spinach, washed
  • 1 cup strawberries, sliced
  • 1/3 red onion, sliced
  • 2 avocados, chopped or sliced
  • 2 Nature's Yoke eggs, hard-boiled
  • feta cheese, crumbled

Candied Pecans

  • 1 tbsp butter
  • 1 tbsp brown sugar
  • 1/2 cup pecans

Dressings:

  • 2 tbsp honey
  • 1/4 cup olive oil
  • 1 tbsp Dijon mustard
  • 1/2 tsp salt
  • 2 garlic cloves, minced
  • 1/4 tsp pepper
  • 1/4 tsp paprika

Instructions
 

Candied Pecans:

  • Heat one tablespoon of butter in a small skillet. Add brown sugar and melt. Add pecans, stir to coat and toast for a few minutes. Spread out on wax paper to cool.

To Assemble the Salad

  • Place spinach in a large bowl. Add strawberries, red onion, avocado, feta cheese, hard-boiled eggs and candied pecans.
  • Combine dressing ingredients and drizzle over salad. Toss and serve.
