
Spinach Strawberry Salad
Popping with color, bursting with flavor and brimming with texture, this salad will quickly make it to the top of your "favorite salad list".

Ingredients
- 10 fresh spinach, washed
- 1 cup strawberries, sliced
- 1/3 red onion, sliced
- 2 avocados, chopped or sliced
- 2 Nature's Yoke eggs, hard-boiled
- feta cheese, crumbled
Candied Pecans
- 1 tbsp butter
- 1 tbsp brown sugar
- 1/2 cup pecans
Dressings:
- 2 tbsp honey
- 1/4 cup olive oil
- 1 tbsp Dijon mustard
- 1/2 tsp salt
- 2 garlic cloves, minced
- 1/4 tsp pepper
- 1/4 tsp paprika
Instructions
Candied Pecans:
- Heat one tablespoon of butter in a small skillet. Add brown sugar and melt. Add pecans, stir to coat and toast for a few minutes. Spread out on wax paper to cool.
To Assemble the Salad
- Place spinach in a large bowl. Add strawberries, red onion, avocado, feta cheese, hard-boiled eggs and candied pecans.
- Combine dressing ingredients and drizzle over salad. Toss and serve.
