Ingredients
- 1/2 lb ground beef
- 1/2 lb ground turkey
- 1 cup frozen corn
- 1/2 cup picante sauce
- 1/3 cup old-fashioned oats
- 1/4 cup fresh cilantro, minced
- 1 tbsp chili powder
- 1 1/2 tsp cumin
- 1 large Nature's Yoke egg
- 1/4 cup ketchup
Instructions
- Preheat oven to 375 F.
- Combine first 8 ingredients in a large bowl; stir well. Shape meat mixture into a loaf on a broiler pan coated with cooking spray.
- Bake uncovered for 50 minutes. Brush with ketchup and let meat loaf stand for 10 minutes before slicing. [Meat loaf can be prepared in advance or make a double batch and freeze the extra loaf for a later date. To prepare, shape loaf, wrap in heavy-duty plastic wrap and foil, then freeze. Thaw overnight in refrigerator; remove plastic and foil and bake as directed.]
