Ingredients
Meatballs
- 1/2 cup milk
- 1 Natures Yoke egg
- 1 garlic clove, minced
- 1 tsp chili powder
- 1 tsp salt
- 1/2 tsp coarse ground black pepper
- 1 1/2 lb ground beef
- 1/2 cup rolled oats
- 1/2 cup crushed Saltine crackers
- 1/4 cup onion, diced
Sauce
- 1 cup half-and-half
- 2 oz cream cheese, cubed
- 2 tsp Dijon mustard
- 1 cup sharp cheddar cheese, shredded
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- fresh parsley, chopped
Instructions
- Preheat oven to 350 F.
Meatballs
- In a large bowl, mix together milk, egg, garlic, and seasonings. Fold in ground beef, rolled oats, cracker crumbs and onion. Mix just until combined. Form into meatballs and place in a baking dish.
Sauce
- In a small saucepan, bring half-and-half to a simmer. Add cream cheese and whisk until smooth. Add Dijon, cheese, and seasonings. Stir until cheese is melted. Spoon on top of meatballs.
- Bake for 45 minutes uncovered, or until internal temperature reaches 160 F. Garnish with parsley and serve.
