Paleo Omelet Muffins
If you are not on the Paleo diet, add some cheddar to these Paleo Omelet Muffins for a cheesier bite.
- 8 Nature's Yoke eggs
- 8 oz cooked ham, crumbled
- 3/4 cup diced bell pepper
- 1/2 cup diced onion
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 tbsp water
- Preheat oven to 350 degrees. Grease muffin cups or line with paper liners.
- Beat eggs together in a bowl. Add remaining ingredients and mix well. Pour egg mixture evenly into prepared muffin cups.
- Bake in oven until muffins are set in middle, 20-22 minutes.
