Ingredients
  

  • 4 slices whole wheat bread
  • 4 Nature's Yoke eggs
  • 3/4 cup cooked sausage, ham or bacon
  • 1 tbsp butter
  • 4 mushrooms, chopped
  • 3 tbsp onion, chopped
  • 4 tbsp shredded cheese

Instructions
 

  • Stack bread on top of each other and cut out center square, leaving only the crust. Set aside center squares.
  • In a separate bowl, beat eggs. Add veggies and meat of your choice.
  • Saute onion and mushrooms in 1 T. butter until tender. Add to egg mixture.
  • Heat griddle. Place four bread frames onto griddle. Pour egg mixture evenly into four frames. Cook a minute or two, then add 1 T. cheese to the top of each omelette. Place bread square (from center of bread) on top of the omelette. Flip bread over and cook a minute or two longer. Serve immediately.
