Ingredients
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1 1/4 cup white sugar
- 2 tsp baking soda
- 1/2 tsp salt
- 2 cup carrot, grated
- 1/2 cup raisins
- 1/2 cup coconut, grated
- 1 apple, peeled and grated
- 1/2 cup nuts (optional)
- 3 Nature's Yoke eggs
- 1 cup canola oil
- 2 tsp vanilla extract
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, mix flours, sugar, baking soda and salt.
- Stir in carrots, raisins, coconut, apple and nuts.
- Mix eggs, oil and vanilla together; stir into flour mixture just until batter is combined. Spoon into greased muffin tins, filling to the top.
- Bake for 20-22 minutes.
