
Lemon Poppy Seed Muffins

Ingredients
- 3 Nature's Yoke eggs
- 1 1/4 cup sugar
- 1 1/8 cup canola oil
- 1 1/2 cup milk
- 1/4 cup lemon juice
- 1 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 2 tbsp poppy seeds
- 1 1/2 tsp pure vanilla extract
- 1 1/2 tsp almond extract
- 3 1/4 cup all-purpose flour
Instructions
- Beat together eggs, sugar and oil. Add remaining ingredients. Mix well.
- Fill paper lined muffin cups 3/4 full. Bake in preheated oven at 350 F. for 20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool a few minutes in the pan, then remove to wire racks to cool completely.
