Lemon Poppy Seed Muffins

Make your own lemon poppy seed muffins from scratch!  This is a simple recipe and the muffins are so moist and good.

Ingredients
  

  • 3 Nature's Yoke eggs
  • 1 1/4 cup sugar
  • 1 1/8 cup canola oil
  • 1 1/2 cup milk
  • 1/4 cup lemon juice
  • 1 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 2 tbsp poppy seeds
  • 1 1/2 tsp pure vanilla extract
  • 1 1/2 tsp almond extract
  • 3 1/4 cup all-purpose flour

Instructions
 

  • Beat together eggs, sugar and oil. Add remaining ingredients. Mix well.
  • Fill paper lined muffin cups 3/4 full. Bake in preheated oven at 350 F. for 20 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow muffins to cool a few minutes in the pan, then remove to wire racks to cool completely.
