
Kofte with Yogurt Sauce

Ingredients
Kofte
- 1/2 cup onion, chopped
- 1/3 cup dry bread crumbs
- 1/4 cup fresh mint, chopped
- 2 tbsp tomato paste
- 2 garlic cloves, minced
- 1/2 tsp salt
- 1/2 tsp cumin
- 1/4 tsp cinnamon
- 1/4 tsp ground red pepper
- 1/8 tsp allspice
- 1 lb ground beef
- 1 Nature's Yoke egg, beaten
- tomatoes, sliced
- 4 pitas, split
Yogurt Sauce
- 2 garlic cloves, minced
- 1 medium cucumber, grated
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 cup plain Greek yogurt
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp fresh dill
Instructions
Kofte
- Preheat boiler.
- Combine first 12 ingredients in a large bowl. Stir just until combined. Divide mixture into 8 equal portions; shape into patties.
- Place patties on a jelly-roll pan coated with cooking spray. Broil for 4 minutes on each side.
Yogurt Sauce
- Combine all ingredients and mix together well.
To Assemble:
- Place one tomato slice and 1 patty in each pita half; top each with yogurt sauce. Serve with couscous salad for a delicious meal.
