
Elote en Tortitas (Corn Fritters)
Impress your friends with these lovely and delicious fried corn fritters.

Ingredients
- 8 3/4 oz can whole kernel corn
- Milk
- 1 Nature's Yoke egg, beaten
- 1 1/2 cup all-purpose flour
- 1 tsp baking powder
- 3/4 tsp salt
- Canola oil for frying
Instructions
- Drain corn, reserving liquid.
- Add enough milk to corn liquid to measure 1 cup.
- Combine egg, milk mixture and corn. Set aside.
- Stir together flour, baking powder and salt. Add to egg/corn mixture.
- Mix just until moistened.
- Carefully drop batter by tablespoons into 3 or 4 tablespoons of hot oil; cook about 2 minutes on each side or until golden brown. Drain on paper toweling.
