Elote en Tortitas (Corn Fritters)

Impress your friends with these lovely and delicious fried corn fritters.

Ingredients
  

  • 8 3/4 oz can whole kernel corn
  • Milk
  • 1 Nature's Yoke egg, beaten
  • 1 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 3/4 tsp salt
  • Canola oil for frying

Instructions
 

  • Drain corn, reserving liquid.
  • Add enough milk to corn liquid to measure 1 cup.
  • Combine egg, milk mixture and corn. Set aside.
  • Stir together flour, baking powder and salt. Add to egg/corn mixture.
  • Mix just until moistened.
  • Carefully drop batter by tablespoons into 3 or 4 tablespoons of hot oil; cook about 2 minutes on each side or until golden brown. Drain on paper toweling.
