Egg Salad Sandwich
Egg salad is a delicious and creamy answer to lunch, whether you like it on bread as a sandwich or prefer it on tomatoes or lettuce for a low-carb treat.
- 4 hard-boiled Nature's Yoke Eggs
- 1/4 cup chopped dill pickle
- 2 tbsp minced onion
- 3 tbsp mayonnaise
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/8 tsp curry powder
- Combine all ingredients and refrigerate until ready to use.
- Spread egg salad onto bread or sandwich rolls and serve with lettuce and tomato.
