Egg salad is a delicious and creamy answer to lunch, whether you like it on bread as a sandwich or prefer it on tomatoes or lettuce for a low-carb treat.

Ingredients
  

  • 4 hard-boiled Nature's Yoke Eggs
  • 1/4 cup chopped dill pickle
  • 2 tbsp minced onion
  • 3 tbsp mayonnaise
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp curry powder

Instructions
 

  • Combine all ingredients and refrigerate until ready to use.
  • Spread egg salad onto bread or sandwich rolls and serve with lettuce and tomato.
