Egg and Green Onion Pie

This traditional Moldovan recipe for Egg and Green Onion Pie (Placinte) submitted to us by a guest contributor, celebrates her heritage.

Ingredients
  

  • 1 tbsp water
  • 1 tbsp yeast
  • 1/2 tsp salt
  • 1 cup warm water
  • 1 tbsp + 1 tsp. olive oil
  • 3 2/3 cup all purpose flour
  • 1/2 cup corn oil

Egg Filling

  • 10 Nature's Yoke eggs, hardboiled
  • 1 bunches green onions
  • salt to taste

Instructions
 

  • Mix 1 T. water with yeast and let it set until softened, about 8 minutes.
  • In a large bowl, mix together salt, 1 c. water, olive oil and softened yeast. Add flour and knead to form soft dough, about ten minutes. Divide into 8 balls, cover with a cloth and allow to rise for an hour.
  • While the dough is rising, prepare egg filling. Dice peeled hard boiled eggs into very small squares. Wash the green onions and dice into very small pieces. Mix diced eggs and onion together. Sprinkle with salt.
  • Sprinkle a little flour onto work table. Roll out dough into 9 inch circle. Place 1 cup of egg mixture in the center and fold in the edges to meet in the center, pinching them to seal. Gently roll out again to an 8" circle and fry in corn oil over medium low heat until golden (about 2 minutes on each side.)
