Chicken and Waffle Sandwhich

Ingredients
  

Waffles*:

  • 1 cup all purpose flour
  • 2 Tablespoon granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup milk
  • 2 large Natures Yoke Organic Free Range eggs
  • 4 Tablespoons Natures Yoke Sea Salted Butter melted

Fried Chicken**:

  • 2-3 cups avocado oil for frying
  • 2 large chicken breasts cut into two strips each.
  • 1 cup flour
  • 2 large Natures Yoke Organic Free Range eggs
  • 2 Tablespoon milk
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika - optional

Over Easy Eggs:

  • 2 large Natures Yoke Organic Free Range eggs
  • 2 Tablespoon extra virgin olive oil for frying

To finish:

  • 1 cup sliced Natures Yoke Harvest Jack cheese
  • Maple syrup for drizzling

Instructions
 

Waffles:

  • In a large bowl add the dry ingredients. Whisk together.
  • Make a well in the center of the dry ingredients.
  • Add the eggs, milk and whisk together with the flour until completely combined.
  • While whisking, slowly stream in the melted butter.
  • Whisk until just combined and batter is silky.
  • Follow your waffle iron manufacturers instructions and cook the waffles.
  • Set aside. (This recipe makes two 7 inch waffles that will be divided into fours)

Fried Chicken:

  • Heat your oil to 350º F.
  • While the oil is heating mix the flour and spices in a shallow bowl.
  • In second shallow bowl, add the eggs and milk. Whisk to combine.
  • Starting with the first chicken strip, dredge in egg and flour, then back in the egg and then back in the flour. Each piece of chicken will be dredged twice.
  • Repeat with the remaining strips.
  • Using tongs, gently lay the strips into the hot oil.
  • Cook the strips until golden brown on each side, about 2-3 minutes per side.
  • Lay cooked chicken strips on cooling rack.

Eggs:

  • Heat oil in fry pan.
  • When oil is hot, gently add the eggs and cook until done, flipping halfway in between.
  • Set on plate.

Assembly:

  • Arrange four plates.
  • Break waffles into fours (most waffle irons have indentations for easy dividing. If yours doesn’t use a knife.)
  • Lay one piece of waffle on each plate.
  • Place a slice of cheese onto the waffle base.
  • Lay a chicken strip on top of the cheese.
  • Gently layer an egg on top of each chicken piece.
  • Drizzle with maple syrup and top with top piece of waffle.

*If you do not have a waffle iron you can use frozen waffles and cook per manufacturers instructions.

    ** If frying your own chicken strips is intimidating you can use frozen chicken strips and cook per manufacturers instructions.
