Southwestern Meat Loaf, bursting with flavor and color and made with Nature's Yoke eggs, is healthy, gluten-free, and simple to make. You can prepare it ahead and freeze it, saving it for that day when your schedule is crazy.

Ingredients
  

  • 1/2 lb ground beef
  • 1/2 lb ground turkey
  • 1 cup frozen corn
  • 1/2 cup picante sauce
  • 1/3 cup old-fashioned oats
  • 1/4 cup fresh cilantro, minced
  • 1 tbsp chili powder
  • 1 1/2 tsp cumin
  • 1 large Nature's Yoke egg
  • 1/4 cup ketchup

Instructions
 

  • Preheat oven to 375 F.
  • Combine first 8 ingredients in a large bowl; stir well. Shape meat mixture into a loaf on a broiler pan coated with cooking spray.
  • Bake uncovered for 50 minutes. Brush with ketchup and let meat loaf stand for 10 minutes before slicing. [Meat loaf can be prepared in advance or make a double batch and freeze the extra loaf for a later date. To prepare, shape loaf, wrap in heavy-duty plastic wrap and foil, then freeze. Thaw overnight in refrigerator; remove plastic and foil and bake as directed.]
