Morning Glory Muffins

Full of goodness, these Morning Glory Muffins are not only delicious but nutritious!

Ingredients
  

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 1/4 cup white sugar
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 cup carrot, grated
  • 1/2 cup raisins
  • 1/2 cup coconut, grated
  • 1 apple, peeled and grated
  • 1/2 cup nuts (optional)
  • 3 Nature's Yoke eggs
  • 1 cup canola oil
  • 2 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a large bowl, mix flours, sugar, baking soda and salt.
  • Stir in carrots, raisins, coconut, apple and nuts.
  • Mix eggs, oil and vanilla together; stir into flour mixture just until batter is combined. Spoon into greased muffin tins, filling to the top.
  • Bake for 20-22 minutes.
