Pumpkin Muffins
Made with pumpkin and sprinkled with powdered sugar, pumpkin muffins are a true seasonal delight. Muffin Season, that is. We love them year round!

- 2 cup all-purpose flour
- 1/3 cup sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 Nature's Yoke egg
- 1 cup milk
- 2/3 cup mashed pumpkin
- 1/4 cup butter, melted
- Powdered sugar
Combine dry ingredients in large bowl.
Beat egg and add milk, pumpkin and butter, mixing well. Add to dry ingredients. Stir just until mixed. (Do not over stir.)
Fill each greased muffin tins 2/3 full. Bake at 425 F. for 20 minutes or until toothpick inserted in center of muffin comes out clean.
Cool and sprinkle with powdered sugar.
