Paleo Omelet Muffins

If you are not on the Paleo diet, add some cheddar to these Paleo Omelet Muffins for a cheesier bite.

Ingredients
  

  • 8 Nature's Yoke eggs
  • 8 oz cooked ham, crumbled
  • 3/4 cup diced bell pepper
  • 1/2 cup diced onion
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 2 tbsp water

Instructions
 

  • Preheat oven to 350 degrees. Grease muffin cups or line with paper liners.
  • Beat eggs together in a bowl. Add remaining ingredients and mix well. Pour egg mixture evenly into prepared muffin cups.
  • Bake in oven until muffins are set in middle, 20-22 minutes.
