Buttermilk Pumpkin Waffles
Buttermilk Pumpkin Waffles are a delicious, seasonal breakfast (or dinner!) your whole family will love.
- 1/4 cup melted butter
- 1 Nature's Yoke egg
- 2 1/4 cup buttermilk
- 1/2 cup brown sugar
- 1 cup pumpkin puree
- 2 cup flour
- 1/2 tsp salt
- 1 tbsp baking powder
- 3 tbsp corn meal
- 1/4 tsp cinnamon
- 1 1/2 tsp pumpkin pie spice
Preheat waffle iron.
In medium bowl combine butter, egg, buttermilk, brown sugar and pumpkin.
Add flour, salt, baking powder, corn meal, cinnamon and pumpkin spice.
Mix until just combined- do not over mix.
Pour batter into waffle iron and bake until golden brown.
Serve with maple syrup and/or cool whip.
