Blueberry-Coconut Baked Oatmeal

- 2 cup rolled oats
- 1/2 cup flaked coconut
- 1/4 cup brown sugar, packed
- 1 tsp baking powder
- 1 tsp Saigon cinnamon
- 1/2 tsp salt
- 1 tbsp milled flax seed
- 2 cup 1% milk
- 3 tbsp coconut oil, softened
- 1 Nature's Yoke egg, beaten
- 1 tsp vanilla
- 1 1/2 cup blueberries
Preheat oven to 350 F. Grease an 8 inch square baking dish or individual ramekins.
Mix oats, coconut flakes, brown sugar, baking powder, cinnamon, salt and flax seed in a bowl.
Whisk milk, egg, coconut oil and vanilla together in a separate bowl.
Arrange 2/3 of the blueberries into the bottom of the prepared baking dish. Combine oats and milk mixture together and spoon over berries. Sprinkle with remaining blueberries.
Bake about 35 minutes, or until golden brown on top. Oatmeal should be bubbly around the edges. Cool five minutes before serving.
