Blueberry-Coconut Baked Oatmeal

Ingredients
  

  • 2 cup rolled oats
  • 1/2 cup flaked coconut
  • 1/4 cup brown sugar, packed
  • 1 tsp baking powder
  • 1 tsp Saigon cinnamon
  • 1/2 tsp salt
  • 1 tbsp milled flax seed
  • 2 cup 1% milk
  • 3 tbsp coconut oil, softened
  • 1 Nature's Yoke egg, beaten
  • 1 tsp vanilla
  • 1 1/2 cup blueberries

Instructions
 

  • Preheat oven to 350 F. Grease an 8 inch square baking dish or individual ramekins.
  • Mix oats, coconut flakes, brown sugar, baking powder, cinnamon, salt and flax seed in a bowl.
  • Whisk milk, egg, coconut oil and vanilla together in a separate bowl.
  • Arrange 2/3 of the blueberries into the bottom of the prepared baking dish. Combine oats and milk mixture together and spoon over berries. Sprinkle with remaining blueberries.
  • Bake about 35 minutes, or until golden brown on top. Oatmeal should be bubbly around the edges. Cool five minutes before serving.
