dates, finely diced

butter

Nature's Yoke egg, beaten

flour
pinch of salt
Cream

cup
heavy whipping cream
1/2
cup
sugar
Instructions
Cake
Dissolve baking soda in hot water and pour over dates; cool.
Cream butter, sugar and egg.
Mix in flour and salt; add dates.
Pour into a greased 9 x 9 pan. Bake at 350 F. for 25 minutes, or until center springs back lightly with touch of fingertip.
Cool cake completely. (It can be frozen a week or two before using. Make sure to thaw before using.)

Whip heavy cream with sugar until soft peaks form. (Don't over beat or you will have butter!)
To serve, cut cake into bite-size pieces. Top with whipped cream and fold gently.
