Rhubarb Bars

Rhubarb Bars, more like a buttery cake topped with rhubarb filling, are simple, sweet and so good!

Ingredients
  

  • 1 cup butter, softened
  • 1 1/4 cup sugar
  • 3 large Nature's Yoke eggs
  • 3 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla

Filling

  • 1 cup water
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • 3 tbsp strawberry jam
  • 1 tsp vanilla
  • 4 cup rhubarb, chopped

Glaze

  • 1/2 cup powdered sugar
  • 2 tbsp cream

Instructions
 

  • In a mixer, cream butter and sugar. Add eggs, one at a time and mix well. Add flour, baking powder, salt, and vanilla. Grease a 9x13 baking pan and spread 3/4 of the batter into the dish. (The batter will be thick.)

Filling

  • In a saucepan, whisk together water, sugar, and cornstarch. Heat until thickened, remove from heat, and add strawberry jam and vanilla. Add chopped rhubarb and stir. Pour rhubarb mixture over batter and top with remaining batter by adding spoonfuls evenly over the top. Bake at 325 F. for 1 hour, or until toothpick inserted in the center comes out clean.
  • Remove from oven and cool completely. Mix together glaze ingredients and drizzle over bars before serving.
