Turkey-Curry Croissants
Our turkey-curry croissants will delight you with their fruity filling and nutty crunch.They are the perfect choice for a light luncheon.
- 8 oz can peach slices
- 1 cup finely chopped cooked turkey or chicken
- 2 tbsp craisins
- 2 Nature's Yoke eggs, hard-boiled
- 3 oz cream cheese, softened
- 1/2 tsp curry powder
- 6 croissants, split
- 1/4 cup peanuts, chopped
- lettuce leaves
Drain and chop peaches, reserving 1 T. liquid. Chop hard-boiled eggs. In a mixing bowl, combine peaches, turkey or chicken, eggs and craisins.
In a small mixing bowl, beat cream cheese, peach liquid and curry powder together until smooth. Pour over turkey mixture , tossing to coat.
Spread mixture on croissant half. Sprinkle with peanuts, then add lettuce. Cap with croissant tops.
